Dining at Forma Singapore is like stepping into a world of refined Italian flavors, where every dish is crafted with care and attention to detail. The Pane di Patate Azzimo con Funghi was a delightful start, with the Yukon potato flatbread offering a unique, slightly tangy taste that paired wonderfully with the earthy mushrooms. The wild mushrooms added a deep, rich flavor that I couldn’t get enough of.

Next, the Polpette di Baccalà were a standout. These Sicilian fried salted cod balls were crispy on the outside and perfectly soft inside, with a hint of Aleppo chili that gave them a subtle kick. The lemon aioli added a refreshing tang that balanced out the flavors beautifully.

I also enjoyed the Spaghetti alla Nerano, which featured long pasta cooked to perfection with zucchini, garlic butter, and a hint of black pepper. The Provolone del Monaco D.O.P. added a creamy richness that made this dish feel indulgent yet comforting.

However, I found the Struncatura Ammollicata to be slightly underwhelming. The rye pasta had a distinct, strong flavor that wasn’t as balanced as I had hoped. The anchovies and breadcrumbs were flavorful, but the overall taste felt a bit too intense for my liking.

The meal ended on a sweet note with the Torta all’Olio di Oliva, a simple yet flavorful olive oil cake. The EVOO gelato was a delightful surprise, adding a creamy and refreshing element to the dessert.
